I come to you today with the most intensely coconut thing I have ever tasted! That is an accomplishment for me, the self-proclaimed coconut addict! Honestly, my favorite snack right now combines two of my favorite things: coconut flakes and peanut butter…. SO GOOD.
Basicallly, this is part of my AP spanish project! We had a very wide breadth of topics to choose from; the only constraints being that we had to relate our project to three of 5 themes. I choose to do a food- related project (of course) and research Venezuelan cuisine. Why Venezuela you ask? Well, my longtime nanny Gladys is from Venezuela, and I remember so dearly everything she cooked for us, and mostly her love for coconut. I remember that every time we went to Baskin Robbins after swim team practice, she’d always order the almond coconut ice cream. I never knew that her coconut addiction would transfer to me, but it has. I dedicate this smoothie to her, and all the memories we had with her.
Venezuelan Coconut Smoothie
Ever so slightly adapted from About.com South American Food
Makes 3 glasses
2 cups dried or frozen shredded coconut
1/2 cup milk
1/3 cream of coconut
1/3 sweetened condensed milk
3/4 vanilla ice cream
1 teaspoon vanilla
Pinch of salt
Ice (depending how slushy you want your drink)
1/2 teaspoon cinnamon, + more for the top
Optional whipped cream
Place the coconut, milk, ice cream, condensed milk, pinch of salt, ice, cinnamon, and vanilla in the blender. Blend until as smooth as possible. Serve immediately with a dash of powdered cinnamon on top of each glass and whipped cream!
