Marshmallow Peanut Butter Pretzel Bars

AAAHH. These are AMAZING. Make them.

First, I pulled out my trusty Trader Joe’s chocolate chip cookie dough for my crust, and of course some graham crackers.

Basically, I pressed the dough into my 9×9 pan, making sure to get an even layer, then I crushed graham crackers all over the top of it. This is what it looked like before it went into the oven.

Aaaah. Nice, puffy, and fluffy.

Next…well. I decided to slather melted chocolate all over the top of it.

This went into the oven again, to lightly brown these guys.

The peanut butter pretzels come next, and man are these things good/addicting/I’m totally addicted. Gah. I eat them all the time. For snack, for lunch, for breakfast…heh. Anyways, press them on top of the marshmallows.

And then, because I decided there wasn’t enough peanut butter or sugar or calories in this, I melted peanut butter with butter and powdered sugar to make a sort of glaze for the top.

It went in the oven again. Everything just kinda melted together and created this beautiful ooey gooey mess.

Now, what I’m sure you’ve all been waiting for and probably skipped through all the pictures for: the recipe!

Marshmallow Peanut Butter Pretzel Bars

Makes 1 9×9 inch pan

1 roll (or about 10 individual cookies) of chocolate chip or peanut butter cookie dough

1/2 cup crushed graham crackers

1/2 cup chocolate chips + 1 tablespoon of butter or oil

2 1/2 cups of mini marshmallow

2 cups of peanut butter pretzels

3/4 cup creamy peanut butter

1 tablespoon butter

1 tablespoon powdered sugar (if you want a less sweet peanut butter topping, add less, if you want it sweeter, add more)

1/4 chocolate chips (optional, for top of bars)

Preheat oven to 350°, and spray a 9×9 pan with non-stick spray. Press your chocolate chip cookie dough into the prepared pan. Crush graham crackers, then cover the crust with them. Bake for 10-12 minutes until edges are golden. While the crust is in the oven, melt your chocolate chips in the microwave for about 30 seconds and then add softened butter or oil. Spoon melted chocolate over crust, making sure to cover evenly. Sprinkle marshmallows evenly on top of crust and bake for 2-3 more minutes until marshmallows puff up and brown lightly (VERY LIGHTLY). Remove from oven and immediately press your pretzel nuggets and chocolate chips (if desired) into the warm marshmallows. Now, melt peanut butter and butter in the microwave. Stir in powdered sugar and spoon in dollops all over the top of the bars. Let cool (I put mine in the freezer for half an hour) and cut into squares.

Store in an airtight container for up to 2 days. You can cut these with a sharp spatula or a wet knife to prevent from the marshmallow sticking. Putting the pan in the freezer also helps with the marshmallow stickiness.

Notes:

1. You can add cereal to this for another layer, or completely omit the pretzel nuggets for cereal!

2. You can also use white chocolate chips and melt white chocolate for the bars.
